Lately, I’ve been falling into the world of jorim —
after watching Chef Choi Kang-rok on Culinary Class War,
I started cooking one simmered dish at a time.
I was never someone who craved jorim.
But there’s something about its subtlety —
the way flavors don’t rush, the way patience becomes seasoning.

Butagakuni is exactly that.
Pork belly gently simmered for a long time,
until you almost wonder, is it even done yet?
That’s when you turn the heat off.

최근 흑백요리사에서 최강록 셰프의 ‘조림’ 을 보고
조림의 세계에 조금씩 빠져들고 있어요.
하나씩, 하나씩 만들어보는 중이에요.
사실 저는 평소에 조림을 즐기는 편은 아니었어요.
그런데 조림에는
맛이 서두르지 않는 은은함이 있더라고요.
기다림 자체가 양념이 되는 요리랄까요.
부타가쿠니도 그래요.
돼지고기를 오랫동안, 아주 은근하게 졸이다가
‘아직 덜 된 것 같은데?’ 싶을 때
불을 끄는 게 포인트.

Today, I was sitting down to watch Culinary Class War, my soul needed a snack that felt just as extra as the show.
So I made a potato chip charcuterie — thick yogurt for dipping, capicollo, olives.
A $0 redesign of whatever I had left in the fridge.
