SERVES: 10-20 people (about 200 dumplings) 

For the Juicy Explosion Filling: 
• 540g ground beef 
• 1.4kg ground pork 
• 250ml (1 cup) water heated to 60°C (140°F) — the secret weapon 
• 324g prepared cabbage (from 500g fresh napa cabbage, see prep below) 
• 20g (4 cloves) garlic, minced 
• 20g fresh ginger, grated and juice extracted (discard pulp) 
• 30g (3 large scallions), finely chopped 
• 45ml (3 tbsp) mirin 
• 30ml (2 tbsp) soy sauce 
• 15ml (1 tbsp) fish sauce 
• 15ml (1 tbsp) Worcestershire sauce 
• 22ml (1.5 tbsp) Chinese black vinegar 
• 30ml (2 tbsp) toasted sesame oil 
• 3g (½ tsp) sea salt 
• 3g (½ tsp) ground black pepper
For Cabbage Preparation: 
• 500g napa cabbage, finely chopped 
• 15g (1 tbsp) sea salt for brining
For Assembly: 
• 200 round dumpling wrappers (store-bought or homemade) 
• Small bowl of water for sealing edges
For the Viral Crispy Skirt: 
• 100ml (scant ½ cup) water 
• 15g (1 tbsp) all-purpose flour 
• 15ml (1 tbsp) olive oil
For Cooking & Serving: 
• 30ml (2 tbsp) olive oil per batch

최근 흑백요리사에서 최강록 셰프의 ‘조림’ 을 보고
조림의 세계에 조금씩 빠져들고 있어요.
하나씩, 하나씩 만들어보는 중이에요.
사실 저는 평소에 조림을 즐기는 편은 아니었어요.
그런데 조림에는

Wanted to braise everything in sight like a true master 🔥
but tonight? 9-minute express version 🐟

Japanese-style braised sea bream
Threw in whatever I had at home and just... braised it all!!

The magic ratio: 
Mirin 5 : Sake 4 : Soy sauce 1
That glossy soy-glazed perfection hitting different at midnight. Just a light braise and you get tender fish with that perfect sauce-to-bite ratio 👌
