Ingredients
200g mixed nuts (I used almonds and walnuts)
74g brown sugar
15g unsalted butter
2g kosher salt
2g ground cinnamon
15g vanilla extract ((optional))
Instructions

Roast the nuts for about 7 minutes. (140°C)

In a large pan add the brown sugar, kosher salt, ground cinnamon, and water and gently mix.

Boil down to 116 ° C and add nuts. Mix to cover completely.

Continue mixing on medium heat until the nuts crystallize white.

After crystallization, continue to mix until gets clear caramel.

Finally, add unsalted butter.
