This recipe is my homey version of a birthday cake. It's the best choice which is a simple home-style cake packed with my husband’s favorite ingredients: apple, raisins, and enough spice to accent the sweetness :)
I used monk fruit sweetener and the fruits that make this cake lightly sweet. Celebrating a birthday and eating a thick slice of this cake brings me happiness; happiness is not far away!!

Ingredients
for the apple marinade
450g green apples (peeled and diced)
15ml lemon juice
30g maple syrup
15g monk fruit sweetener
For the raisins marinade
200g raisins
50ml rum
for the cake
375g AP(all-purpose flour)
87g brown sugar
100g monk fruit sweetener
22g ground cinnamon
7g baking powder
5g kosher salt
120ml milk
125ml vegetable oil
4 eggs (large)
5ml vanilla extract
for the glaze
80g granulated sugar
30ml milk or heavy cream
Instructions
For the apple marinate
In a large mixing bowl add cubed apple, lemon juice, maple syrup, and monk fruit sweetener. Mix well and set aside for 20 minutes.
For the raisins marinade
In a mixing bowl or container, add raisins and rum and set aside for 20 minutes.
For the cake
Preheat the oven to 350°F(175°C). Lightly spray the bundt pan with cooking spray or use softened butter to grease your bundt pan.
* Butter adds flavor and allows you to more visually ensure that you have coated your pan well.
In the bowl of a stand mixer, add dry ingredients: AP, brown sugar, monkfruit sweetener, ground cinnamon, baking powder, and salt.
Add eggs one at a time and add vanilla extract. Mix until well blended.
Add vegetable oil and milk and blend well. The batter will be very silky and smooth.
Gently fold in raisins and diced apples by hand until just combined.
Pour the cake batter into the prepared bundt cake pan. Bake for 45 minutes to 1 hour or until cake tester comes out clean.
Allow to cool for 15 minutes and carefully invert onto a wire rack and cool completely.
While the cake is cooling prepare the glaze.
For the glaze
In a mixing bowl add granulated sugar and milk. Mix well drizzle over the cake and top with crushed walnuts.
