  1. Wash and trim garlic scapes to jar length.

  1. In. a small pot, combine water, soy sauce, sugar, vinegar. Bring to boil, stirring until sugar dissolves.

  1. Pack scapes into sterilized jars.

  1. Pour hot brine over scapes, covering completely. Seal jars.

  1. Cool to room temp, then refrigerate.

  1. Rest at least 3 days before eating. Flavor deepens over time.
