  1. Bring a pot of water to a boil. Gently lower the eggs in and cook for 7 minutes for creamy yolks.

    For a runnier, more liquid yolk, reduce cooking time to 6 minutes.
  1. As the eggs cook, prepare an ice bath. When the 7 minutes are up, immediately transfer eggs to ice bath to stop the cooking. Let sit for 5 minutes.

  1. Peel the eggs carefully under running water, keeping them smooth and intact.

  1. In a jar or bowl, mix the soy sauce, water, mirin, honey, garlic, green onion, and red chilli.

  1. Submerge the eggs completely in marinade. Cover and refrigerate for at least overnight.
