You can be safe at room temperature for a few days but recommended to store the jars in the fridge.

The oil will solidify but will liquefy quickly when you pull out at room temperature.

Ingredients
  • 250 g fresh tomato
  • 150 ml extra-virgin olive oil
  • 3 clove clove garlic (, sliced)
  • 5 g fresh herbs ((rosemary, basil))
  • 3 g oregano (, dried)
  • 3 g kosher salt
  • 3 g black pepper
Instructions
  1. Slice the garlic.

    Choose ripe and firm tomatoes. Then, slice the tomatoes in half lengthwise.

  3. Place the tomato slices on a baking sheet lined with parchment paper.

  4. Spread them out then season with salt, pepper and oregano for added flavor.

  5. Dry them slowly in the air fryer for about 1 hour to 1 hour 30 minutes(80-100°C).

    If using an oven, preheat it to its lowest setting (100°C) and place the baking sheet inside.

    The exact time depends on the thickness of the slices and the moisture content of the tomatoes.

    Drying the tomatoes will take several hours, how many will depend on the size and water content of your tomatoes.
  6. In a jar, fill it with sliced garlic and herbs while tomatoes are roasting.

  7. Once dried, let the tomatoes cool completely.

  8. Fill with olive oil until the ingredients are completely covered.
