Pork adobo, aka braised pork is super easy to make at home.
This recipe is homey version that every one can make easily.
You can see the tender, juicy pork cooked in a rich, flavourful peppery sauce.
You can also use ribs for this dish. Also, I put some baby bok choy for crispy texture.
400g pork belly
1/4 cup soy sauce
1/4 cup vinegar
1/2 cup water
1tbsp brown sugar
1 slice ginger
10 cloves garlic
1tbsp whole black peppercorn
Cut the pork belly into sizeable chunks.
In a pan, turn the fire to high heat and sear the pork belly until golden brown.
Take the pork belly out and add the garlic, black pepper corns and ginger for a few minutes.
Add the pork belly, bay leaves.
Add soy sauce, vinegar, and brown sugar to simmer.
Let it cook in high heat for 5 mins.
Turn the fire to low heat, cover with a lid and leave it to cook for 30mins - 40mins.
(I added some baby bok choy at the end.)
Serve with the rice.
