Open-Face Grilled Eggplant Sandwiches

A recipe with a little bit of a twist, Spanish pan con tomato.

Just my version: an extra crunchy piece of toast is rubbed with a piece of garlic and tomato and finally, topped with grilled veggies. Also, give a final love with parmesan:)
A garlicky toasted bread with, juicy tomato, smoky grilled eggplant, and zucchini is the best combination.

Using garlic is not mandatory, but highly recommend because it adds an extra flavor to the toast.


· 1/2 eggplant
· 1/2 aehobak(zucchini)
· 1 tomato
· 1 garlic Clove
· salt
· 1tsp extra virgin olive oil
· parmesan
· 2pcs sour bread


Toast a piece of sour bread.

Slice eggplant and zucchini and grilled them in preheated oven (180C) 
or searing pan.

Rub the garlic -> tomato onto the toast.

Top with grilled veges and finish with grated parmesan cheese.
